A tasty and easy way to create a delicious pumpkin treat!
This recipe is not only easy, but it's absolutely delicious...I mean who doesn't love a bit of garlic & melted cheese!?! You can use a pumpkin or a squash and change the type of cheese dependent on your taste. This delicious recipe was given to me by a lovely couple who visited our patch on our very first day opening in 2021. It's as tasty as they described and my go to pumpkin recipe.
Ingredients
1 small pumpkin or squash
Oil (I've used Hillfarm Oils rapeseed oil)
salt & pepper (I've used Maldon Sea Salt)
1 to 2 garlic cloves roughly chopped
Cream
Gruyere cheese (though Parmesan or Stilton would also be tasty)
Method
Preheat the oven to 160c
Cut the top off the pumpkin and remove seeds (keep these for toasting later).
Pour a little oil in and coat the inside of the pumpkin.
Put in 1-2 cloves of garlic and add a healthy dose of salt & pepper.
Pop the top back on the pumpkin and tightly wrap in tin foil.
Place on a baking tray in the oven for 45mins or until the fresh is soft.
When cooked remove from the oven and carefully unwrap.
Pour in cream and grate cheese.
Re-wrap and leave for 10-15mins.
Serve up with some crusty bread or as a delicious side.
We like to serve ours with peppery steak and a large glass of red wine, but it works really well as a dish it it's own right. You can also use Stilton cheese, which is a really yummy alternative.
