A super easy and deliciously creamy way to serve pumpkin.
This isn't a true Gratin. It's a creamy, easy version of this famous dish, but it tastes absolutely delicious and is a great way to eat pumpkin.
Ingredients
1 pumpkin or squash- I've used a small Celebration Squash here
Oil (I've used Hillfarm Oils rapeseed oil)
Salt & pepper (I've used Maldon Sea Salt)
300ml Double Cream- you won't use all of this
Gruyere cheese
Small roasting dish
Tin foil
Method
Preheat the oven to around 170c
Cut open pumpkin and remove seed (keep these for toasting later)
Slice into thin slithers
Rub a little butter into the bottom of the dish
Layer in the pumpkin slices and pour a little cream on top
Repeat, adding in a little butter between layers until the dish is full
Top off with cream
Grate cheese on top- I've used Gruyere cheese
Add salt and pepper
Cover the top with tin foil
Place in over for approximately 30 mins
Remove tin foil and cook for a further 10 mins till bubbling on top
When cooked remove from the oven and serve
We like to serve this with a pork and chorizo casserole, but it works fantastically with a roast or as a stand alone dish.
