Cheats Pumpkin Gratin

A super easy and deliciously creamy way to serve pumpkin.


This isn't a true Gratin. It's a creamy, easy version of this famous dish, but it tastes absolutely delicious and is a great way to eat pumpkin.


Ingredients

  • 1 pumpkin or squash- I've used a small Celebration Squash here

  • Oil (I've used Hillfarm Oils rapeseed oil)

  • Salt & pepper (I've used Maldon Sea Salt)

  • 300ml Double Cream- you won't use all of this

  • Gruyere cheese

  • Small roasting dish

  • Tin foil


Method

  1. Preheat the oven to around 170c

  2. Cut open pumpkin and remove seed (keep these for toasting later)

  3. Slice into thin slithers

  4. Rub a little butter into the bottom of the dish

  5. Layer in the pumpkin slices and pour a little cream on top

  6. Repeat, adding in a little butter between layers until the dish is full

  7. Top off with cream

  8. Grate cheese on top- I've used Gruyere cheese

  9. Add salt and pepper

  10. Cover the top with tin foil

  11. Place in over for approximately 30 mins

  12. Remove tin foil and cook for a further 10 mins till bubbling on top

  13. When cooked remove from the oven and serve

We like to serve this with a pork and chorizo casserole, but it works fantastically with a roast or as a stand alone dish.
